  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine creamy peanut butter, softened butter, brown sugar, and granulated sugar. Mix until smooth.
  3. Add the egg and vanilla extract to the mixture and beat until fully combined.
  4. In another bowl, whisk together flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients and stir until just combined.
  6. Scoop rounded tablespoons of dough onto ungreased baking sheets, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes or until the edges are golden brown.
  8. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
