Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine creamy peanut butter, softened butter, brown sugar, and granulated sugar. Mix until smooth.
- Add the egg and vanilla extract to the mixture and beat until fully combined.
- In another bowl, whisk together flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients and stir until just combined.
- Scoop rounded tablespoons of dough onto ungreased baking sheets, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the edges are golden brown.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
For a healthier option, consider using natural peanut butter or almond butter. For a gluten-free version, use gluten-free flour instead.
