Description

Taco Loaded Baked Potatoes combine creamy potatoes with seasoned taco meat and your favorite toppings for a comforting, customizable meal.


Ingredients

  • 1 pound lean ground beef
  • 4 to 6 medium Russet potatoes
  • 1 packet (1 ounce) taco seasoning
  • 1/2 cup water
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 1/2 cup diced tomatoes

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash the Russet potatoes under cool water and pierce them with a fork.
  3. Place the potatoes in the oven and bake for 45-60 minutes until soft.
  4. In a skillet, cook the ground beef over medium heat, draining excess fat.
  5. Add taco seasoning and water to the beef, mixing well; cook for an additional 5 minutes.
  6. Once potatoes are baked, cut them lengthwise and fluff the insides with a fork.
  7. Spoon the seasoned beef mixture into each potato and top with shredded cheddar cheese.
  8. Finish with sour cream, green onions, and diced tomatoes before serving.

Notes
