- 1 pound lean ground beef
- 4 to 6 medium Russet potatoes
- 1 packet (1 ounce) taco seasoning
- 1/2 cup water
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup chopped green onions
- 1/2 cup diced tomatoes
Instructions
- Preheat the oven to 400°F (200°C).
- Wash the Russet potatoes under cool water and pierce them with a fork.
- Place the potatoes in the oven and bake for 45-60 minutes until soft.
- In a skillet, cook the ground beef over medium heat, draining excess fat.
- Add taco seasoning and water to the beef, mixing well; cook for an additional 5 minutes.
- Once potatoes are baked, cut them lengthwise and fluff the insides with a fork.
- Spoon the seasoned beef mixture into each potato and top with shredded cheddar cheese.
- Finish with sour cream, green onions, and diced tomatoes before serving.
Notes
Feel free to customize toppings with jalapeños, guacamole, or corn.
