A delightful dessert that captures the essence of summer with smooth cream and fresh strawberries.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1 1/2 cups heavy whipping cream
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 cups fresh strawberries, sliced
  • 1/4 cup granulated sugar (for strawberries)
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch mixed with 1 tbsp water (optional, for thickening)
  • Extra whipped cream for garnish
  • Fresh strawberries or mint leaves for garnish

Instructions

  1. Make the crust: In a mixing bowl, combine graham cracker crumbs and sugar. Pour melted butter over crumbs and mix. Press into the bottom of an 8-inch square dish and refrigerate.
  2. Whip the cream: In a large chilled bowl, whip heavy cream until stiff peaks form. Set the whipped cream aside.
  3. Prepare the cream cheese layer: Beat softened cream cheese with powdered sugar and vanilla until smooth. Gently fold in the whipped cream.
  4. Spread the cream layer: Spoon the cream mixture over the chilled crust and smooth it out. Refrigerate for about 15 minutes.
  5. Make the strawberry topping: In a saucepan, cook sliced strawberries, 1/4 cup sugar, and lemon juice over medium heat for 5-7 minutes until softened. Optionally, add cornstarch-water mixture to thicken.
  6. Top and chill: Spread the cooled strawberry topping over the cream layer. Cover and refrigerate for at least 4 hours.
  7. Serve and garnish: Slice into squares, top with whipped cream, fresh strawberry, or mint before serving.

Notes

For best results, chill overnight to enhance flavor and texture.
