- 2 1/2 cups all-purpose flour
- 2 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup unsalted butter, room temperature
- 1 3/4 cups granulated sugar
- 4 large eggs, room temperature
- 1 tbsp vanilla extract
- 1 cup whole milk, room temperature
- 1/4 cup sour cream
- 2 cups heavy whipping cream, chilled
- 1/2 cup powdered sugar
- 1 tsp vanilla extract (for frosting)
- 2 tbsp cream cheese (optional)
- 2 1/2 cups fresh strawberries (about 25–30 medium berries)
- A few mint leaves for garnish
Instructions
- Preheat the oven to 350°F (175°C).
- Grease and line two 8-inch round pans with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a separate bowl, cream the butter and sugar until light and fluffy, about 3–4 minutes.
- Add eggs one at a time, beating well after each, then stir in the vanilla extract.
- In another bowl, mix together sour cream and milk. Gradually add the dry mixture to the butter mixture, alternating with the milk mixture, beginning and ending with the dry mixture.
- Divide the batter evenly into the prepared pans and smooth the tops.
- Bake for 28–32 minutes or until a toothpick inserted in the center comes out clean.
- Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
- For frosting, beat heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
- Assemble the cake by spreading frosting on the first layer topped with strawberries, then place the second layer on top.
- Apply a crumb coat of frosting around the cake and chill for 20 minutes.
- Frost the entire cake and decorate with remaining strawberries and mint leaves.
- Chill in the refrigerator for 30–60 minutes before serving.
