Description
A creamy and hearty Southern squash casserole made with yellow squash, onions, cheese, and topped with crunchy crackers.
Ingredients

- 2 lbs yellow squash
- 1 medium sweet onion
- 2 cups shredded cheddar cheese
- 1 cup crushed buttery crackers
- 2 large eggs
- 1/2 cup sour cream
- 1/4 cup milk
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 tbsp butter
Instructions
- Slice the squash and chop the onions. Cook them in a skillet with a little water over medium heat until tender, about 10-12 minutes. Drain any extra water.
- In a large bowl, whisk together the eggs, sour cream, milk, and cheddar cheese. Gently stir in the cooked squash and onions. Season with salt and pepper.
- Grease a 9×13-inch baking dish and pour in the mixture. Top with crushed crackers mixed with melted butter and sprinkle more cheese on top.
- Preheat oven to 350°F and bake for 30-35 minutes until the top is golden and bubbly. Let it cool for 5-10 minutes before serving.
Notes
For extra flavor, sauté the squash and onions in butter instead of water. Can be made ahead and refrigerated, bake when ready.
