  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 3/4 cups granulated sugar
  • 4 large eggs
  • 1 tablespoon vanilla extract
  • 1 cup whole milk
  • 1 cup unsalted butter (for frosting)
  • 2 cups packed light brown sugar
  • 3/4 cup heavy cream
  • 1 teaspoon vanilla extract (for frosting)
  • 4 cups powdered sugar, sifted
  • 1 cup chopped pecans, toasted

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare three 8-inch round cake pans by greasing and flouring them.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat the softened butter and granulated sugar until light and fluffy (3-5 minutes).
  4. Add the eggs one at a time, mixing well after each addition, then mix in the vanilla extract.
  5. Gradually add the flour mixture and milk, alternating between them, starting and ending with the flour. Mix until just combined.
  6. Pour the batter evenly into the prepared cake pans and bake for 25-30 minutes. Check for doneness with a toothpick.
  7. Allow the cakes to cool in the pans for 10 minutes, then remove from pans and cool completely on wire racks.
  8. For the frosting, melt 1 cup of unsalted butter in a saucepan, add brown sugar, and cook for 2 minutes. Whisk in heavy cream and bring it to a gentle boil. Remove from heat, stir in vanilla extract, and beat in sifted powdered sugar until smooth.
  9. Once cakes are cool, spread frosting between each layer and on top and sides of the cake. Top with toasted pecans.
  10. Allow the cake to sit for 30 minutes before serving.

Notes

To achieve the best texture, do not overmix the batter and ensure cakes are completely cool before frosting.
