Description

A quick and flavorful Shrimp Fried Rice dish that warms the heart and fills the belly, perfect for busy weeknights and family gatherings.


Ingredients

  • 2 tablespoons vegetable oil
  • 1 pound shrimp, peeled and deveined
  • 2 cups cooked and cooled rice, preferably day-old
  • 2 eggs, beaten
  • 1/2 cup frozen peas
  • 1/2 cup diced carrots
  • 1/2 onion, chopped
  • 2 cloves garlic, minced
  • 3 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon black pepper
  • 2 green onions, sliced, for garnish

Instructions

  1. In a large skillet or wok, pour in 2 tablespoons of vegetable oil. Warm it over medium-high heat.
  2. Add the minced garlic and chopped onion to the skillet. Sauté for about 2 minutes until fragrant and slightly soft.
  3. Toss in the pound of shrimp, cooking for about 3-4 minutes until they turn pink and opaque.
  4. Push the shrimp to one side and pour the beaten eggs into the empty space. Scramble gently until just set.
  5. Stir in the cooled rice, peas, diced carrots, soy sauce, sesame oil, and black pepper. Mix gently until heated through.
  6. Cook for another 3-4 minutes, stirring frequently.
  7. Sprinkle with sliced green onions before serving.

Notes

Use cold rice for fluffy texture and do not overmix to keep the shrimp intact.
