Description
A quick and flavorful Shrimp Fried Rice dish that warms the heart and fills the belly, perfect for busy weeknights and family gatherings.

- 2 tablespoons vegetable oil
- 1 pound shrimp, peeled and deveined
- 2 cups cooked and cooled rice, preferably day-old
- 2 eggs, beaten
- 1/2 cup frozen peas
- 1/2 cup diced carrots
- 1/2 onion, chopped
- 2 cloves garlic, minced
- 3 tablespoons soy sauce
- 1 teaspoon sesame oil
- 1/2 teaspoon black pepper
- 2 green onions, sliced, for garnish
Instructions
- In a large skillet or wok, pour in 2 tablespoons of vegetable oil. Warm it over medium-high heat.
- Add the minced garlic and chopped onion to the skillet. Sauté for about 2 minutes until fragrant and slightly soft.
- Toss in the pound of shrimp, cooking for about 3-4 minutes until they turn pink and opaque.
- Push the shrimp to one side and pour the beaten eggs into the empty space. Scramble gently until just set.
- Stir in the cooled rice, peas, diced carrots, soy sauce, sesame oil, and black pepper. Mix gently until heated through.
- Cook for another 3-4 minutes, stirring frequently.
- Sprinkle with sliced green onions before serving.
Notes
Use cold rice for fluffy texture and do not overmix to keep the shrimp intact.
