1 red bell pepper, chopped

1 can (28 oz) crushed tomatoes or equivalent fresh tomatoes
Salt and pepper, to taste
6 large eggs
Fresh parsley or cilantro, for garnish

Instructions
Heat olive oil in a large skillet over medium heat. Add the chopped onion and bell pepper. Sauté for about 5 minutes until they soften.
