Ingredients

- 1 lb lean ground beef
- 1 yellow onion, diced
- 1 can (15 oz) enchilada sauce
- 8 flour tortillas
- 1 cup shredded pepperoni
- 2 cups shredded mozzarella cheese
- 1 teaspoon garlic powder
- 1 teaspoon oregano
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, add the ground beef and diced onion, cooking over medium heat until browned, about 5-7 minutes. Drain excess fat.
- Sprinkle in garlic powder, oregano, salt, and pepper, mixing well.
- Spread a small amount of enchilada sauce on the bottom of a baking dish.
- Fill each tortilla with beef mixture, pepperoni, and cheese, then roll tightly and place seam-side down in the dish.
- Pour remaining enchilada sauce over the tortillas and sprinkle with mozzarella cheese.
- Bake for 20-25 minutes until cheese is melted and bubbly.
- Let cool slightly before serving.
Notes
For added flavor, garnish with fresh cilantro or sour cream. Consider adding jalapeños for heat or serving with a side salad.
