- 1 lb lean ground beef (90/10)
- 16 oz rotini pasta
- 1 can Campbell’s French Onion Soup (10.5 oz)
- 3 cups shredded mozzarella
- 8 oz cream cheese, softened
- 1 medium yellow onion, diced
- 1 medium green pepper, diced
- 2 cups mushrooms, diced (optional)
- 2 tablespoons butter
- 1/4 teaspoon paprika
- 1/2 tablespoon onion powder
Instructions
- Bring a large pot of salted water to a boil. Add the rotini pasta and cook according to package instructions (about 8-10 minutes) until al dente, then drain and set aside.
- In a large skillet, melt the butter over medium heat. Add diced yellow onion and green pepper and cook for 4-5 minutes until soft.
- Add ground beef to the skillet, breaking it into small pieces with a spatula. Cook until browned, about 5-7 minutes.
- Mix in the French onion soup and softened cream cheese. Sprinkle with paprika and onion powder. Stir until creamy, about 3-5 minutes.
- Add the cooked rotini to the skillet and gently mix until coated in the sauce.
- Top with shredded mozzarella and diced mushrooms (if using). Cover and cook for 2-3 minutes until cheese is fully melted.
- Serve warm, spooning into plates or bowls.
