No-Bake White Chocolate Cranberry Oat Clusters

Description

Delightful no-bake clusters made with oats, dried cranberries, and white chocolate.


Ingredients

  • 2 cups rolled oats
  • 1 cup dried cranberries
  • 1 cup white chocolate chips
  • 1/2 cup creamy peanut butter
  • 1/4 cup honey
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract

Instructions

  1. Combine the rolled oats and dried cranberries in a large mixing bowl. Stir until well mixed.
  2. In a small saucepan, add white chocolate chips, creamy peanut butter, honey, salt, and vanilla extract. Place over low heat.
  3. Stir the mixture continuously until everything melts together into a smooth consistency.
  4. Remove from heat and pour the warm mixture over the oat and cranberry mixture.
  5. Fold the ingredients gently to ensure every oat and cranberry is coated.
  6. Line a baking sheet with parchment paper.
  7. Using a tablespoon, scoop portions of the mixture onto the prepared baking sheet, forming clusters with space in between.
  8. Chill the clusters in the refrigerator for at least 30 minutes or until set.
  9. Gently peel the clusters off the parchment paper once set.
  10. Store in an airtight container at room temperature for up to a week or in the refrigerator for longer freshness.

Notes

These clusters can be customized by adjusting sweetness or adding different fruits and nuts.
