- 1 cup almond flour
- 1 cup pitted dates, packed
- 1/2 cup unsweetened cocoa powder
- 1/4 cup almond butter
- 1/4 cup brewed coffee, cooled
- 1/4 teaspoon sea salt
- 1/2 teaspoon vanilla extract
- 1/2 cup chopped almonds
- 1/4 cup melted dark chocolate for drizzling (optional)
Instructions
- Prepare a 9×9-inch square baking dish lined with parchment paper.
- Add almond flour, pitted dates, cocoa powder, almond butter, brewed coffee, sea salt, and vanilla extract to a food processor.
- Blend the mixture until it forms a sticky dough.
- Fold in the chopped almonds and pulse a few times.
- Transfer the mixture to the prepared baking dish and press it down evenly.
- Refrigerate for at least 2 hours to firm up.
- Lift the fudge out of the dish using the parchment paper and slice into squares.
- If desired, drizzle melted dark chocolate over the squares before serving.
Notes
These squares can be stored in an airtight container in the refrigerator for up to one week or frozen for longer storage.
