- 1 cup rolled oats
- 1 cup almond butter
- 1/2 cup honey
- 1/2 cup almonds, chopped
- 1/4 cup dried cranberries, chopped
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1/4 cup mini chocolate chips (optional)
Instructions
- In a large mixing bowl, combine the rolled oats, chopped almonds, and dried cranberries.
- In a separate microwave-safe bowl, add the almond butter and honey. Microwave for 20-30 seconds, then stir until smooth.
- Add the salt and vanilla to the almond butter and honey, stirring until uniform.
- Pour the sweet mixture over the dry ingredients and mix thoroughly.
- If using, fold in the mini chocolate chips gently.
- Line an 8×8-inch baking dish with parchment paper and transfer the mixture into the dish.
- Press down firmly and evenly to compact the mixture.
- Refrigerate for at least 2 hours until firm.
- Once set, lift the bars out using the parchment paper and slice into desired sizes.
- Store leftovers in an airtight container in the refrigerator for up to a week.
Notes
These bars can be customized with different nuts or sweeteners. They can also be frozen for longer storage.
