- 2 cups rolled oats
- 1 cup unsweetened shredded coconut
- 1 cup chocolate chips
- 1/2 cup almond butter or peanut butter
- 1/3 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Gather all your ingredients. In a large mixing bowl, combine the rolled oats and shredded coconut and mix well.
- In a medium microwave-safe bowl, add the chocolate chips and almond or peanut butter. Microwave on high for 30 seconds, then stir. If needed, continue microwaving in 15-second increments until smooth.
- Quickly add in the honey (or maple syrup), vanilla extract, and salt, stirring until uniform.
- Pour the chocolate mixture over the oats and coconut, mixing thoroughly until evenly coated.
- Prepare a lined baking sheet. Using a tablespoon, scoop out the mixture and form small clusters, spacing them apart.
- Chill in the fridge for at least 30 minutes until firm.
- Remove from the fridge and serve or store in an airtight container.
Notes
Customize your clusters with nuts or dried fruit as desired. Make them vegan by using maple syrup and dairy-free chocolate chips.
