No-Bake Chocolate Coconut Oatmeal Clusters

Description

Delicious and easy no-bake clusters made with rolled oats, shredded coconut, almond butter, and chocolate.


Ingredients

Scale
  • 1 cup rolled oats
  • 1 cup shredded unsweetened coconut
  • 1/2 cup almond butter (or any nut butter of choice)
  • 1/2 cup honey or maple syrup
  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Optional: 1/2 cup chocolate chips or chopped nuts

Instructions

  1. In a large mixing bowl, add rolled oats and shredded coconut. Stir until mixed.
  2. In a medium saucepan, melt almond butter and honey (or maple syrup) over low heat, stirring until smooth.
  3. Remove from heat and stir in cocoa powder, vanilla extract, and salt until glossy.
  4. Pour chocolate mixture over oat and coconut mixture and stir until well-coated.
  5. Line a baking sheet with parchment paper. Use a spoon or hands to form clusters and place them on the sheet.
  6. Chill in the refrigerator for at least 30 minutes to set.
  7. Scoop off the clusters and enjoy or store in an airtight container in the refrigerator.

Notes

For added texture, consider mixing in chocolate chips or nuts before forming clusters.
