Ingredients

- 2 cups rolled oats
- 1 cup unsweetened shredded coconut
- 1/2 cup creamy peanut butter
- 1/2 cup honey or maple syrup
- 1/2 cup dark chocolate chips
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Combine rolled oats and shredded coconut in a large mixing bowl.
- In a small saucepan, mix peanut butter, honey (or maple syrup), and salt over low heat, stirring for 3 to 5 minutes until smooth.
- Remove from heat and stir in vanilla extract.
- Pour the peanut butter mixture over the oat and coconut blend, and mix until combined.
- Fold in the dark chocolate chips gently.
- Drop tablespoon-sized amounts of the mixture onto a parchment-lined baking sheet, leaving space between each cluster.
- Chill in the refrigerator for at least 30 minutes until set.
- Store leftovers in an airtight container in the refrigerator.
Notes
Use natural peanut butter for better flavor. Consider swapping ingredients based on personal preference.
