Delicious no-bake treat combining chocolate, oats, and coconut, perfect for busy families.


Ingredients

  • 2 cups rolled oats
  • 1 cup unsweetened shredded coconut
  • 1/2 cup creamy peanut butter
  • 1/2 cup honey or maple syrup
  • 1/2 cup dark chocolate chips
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Combine rolled oats and shredded coconut in a large mixing bowl.
  2. In a small saucepan, mix peanut butter, honey (or maple syrup), and salt over low heat, stirring for 3 to 5 minutes until smooth.
  3. Remove from heat and stir in vanilla extract.
  4. Pour the peanut butter mixture over the oat and coconut blend, and mix until combined.
  5. Fold in the dark chocolate chips gently.
  6. Drop tablespoon-sized amounts of the mixture onto a parchment-lined baking sheet, leaving space between each cluster.
  7. Chill in the refrigerator for at least 30 minutes until set.
  8. Store leftovers in an airtight container in the refrigerator.

Notes

Use natural peanut butter for better flavor. Consider swapping ingredients based on personal preference.
