Ingredients

- 1 cup rolled oats
- 1 cup shredded unsweetened coconut
- 1/2 cup almond butter (or peanut butter)
- 1/2 cup honey or maple syrup
- 1/4 cup unsweetened cocoa powder
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- Optional: 1/2 cup chocolate chips or chopped nuts
Instructions
- Combine oats and coconut in a large mixing bowl, stirring well.
- Melt almond butter and honey (or maple syrup) together over low heat in a medium saucepan.
- Mix in cocoa powder, vanilla extract, and salt once melted, stirring until combined.
- Pour the chocolate mixture over the oats and coconut, mixing gently.
- Scoop portions of the mixture and shape them into clusters on parchment paper.
- Chill the clusters in the refrigerator for at least 30 minutes to set.
- Serve immediately or store in an airtight container in the refrigerator.
Notes
Post-chill, clusters can be served as a snack or dessert. They store well in the refrigerator for up to a week or in the freezer for three months.
