Description

Delightful no-bake clusters combining oats, coconut, and chocolate for a quick and tasty treat.


Ingredients

  • 1 cup rolled oats
  • 1 cup shredded unsweetened coconut
  • 1/2 cup almond butter (or peanut butter)
  • 1/2 cup honey or maple syrup
  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Optional: 1/2 cup chocolate chips or chopped nuts

Instructions

  1. Combine oats and coconut in a large mixing bowl, stirring well.
  2. Melt almond butter and honey (or maple syrup) together over low heat in a medium saucepan.
  3. Mix in cocoa powder, vanilla extract, and salt once melted, stirring until combined.
  4. Pour the chocolate mixture over the oats and coconut, mixing gently.
  5. Scoop portions of the mixture and shape them into clusters on parchment paper.
  6. Chill the clusters in the refrigerator for at least 30 minutes to set.
  7. Serve immediately or store in an airtight container in the refrigerator.

Notes

Post-chill, clusters can be served as a snack or dessert. They store well in the refrigerator for up to a week or in the freezer for three months.
