Ingredients

- 1 cup rolled oats
- 1/2 cup almond butter (or peanut butter)
- 1/4 cup honey or maple syrup
- 1/4 cup unsweetened cocoa powder
- 1/4 cup chia seeds
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 cup mini chocolate chips (optional)
Instructions
- In a large mixing bowl, combine rolled oats, chia seeds, cocoa powder, and salt. Mix until evenly distributed.
- In a separate small bowl, mix almond butter and honey (or maple syrup) until smooth.
- Add vanilla extract to the almond butter mixture and stir until combined.
- Pour the almond butter mixture into the dry ingredients and mix until fully coated.
- Fold in mini chocolate chips if desired.
- Line a baking sheet with parchment paper.
- Scoop portions of the mixture and shape them into clusters about 1 to 2 inches in diameter, placing them on the parchment paper.
- Refrigerate for at least 30 minutes to firm up.
- Store leftovers in an airtight container in the fridge for up to a week.
Notes
For nut-free, use sunflower seed butter. For added sweetness, adjust the honey or maple syrup to taste.
