Delicious and healthy no-bake oatmeal cups inspired by carrot cake, perfect for a snack or breakfast.
Ingredients

- 1 cup rolled oats
- 1 cup grated carrots
- 1/2 cup Greek yogurt
- 1/4 cup almond milk
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/2 cup raisins or chopped walnuts (optional)
- 1/4 cup shredded coconut (optional)
- 1/2 teaspoon baking powder
Instructions
- In a medium mixing bowl, combine rolled oats, grated carrots, Greek yogurt, almond milk, honey or maple syrup, and vanilla extract. Mix thoroughly.
- Add ground cinnamon, nutmeg, salt, and baking powder. Stir to combine, adding optional raisins or walnuts and coconut if desired.
- Taste the mixture and adjust sweetness as needed.
- Prepare a muffin tin with silicone or paper liners, or lightly grease it.
- Evenly distribute the mixture into each muffin cup, packing them down gently.
- Refrigerate for at least two hours to set.
- Carefully remove from the muffin tin once set.
- Serve with optional toppings like Greek yogurt, walnuts, or coconut.
Notes
These cups can be prepped in advance and stored in the fridge for up to five days. They freeze well for about a month.
