No-Bake Blueberry Cheesecake Energy Bites

Description

Delightful, nutritious snacks that combine the creamy texture of cheesecake with fresh blueberries, perfect for busy days.


Ingredients

  • 1 cup rolled oats
  • 1/2 cup almond butter (or any nut butter of choice)
  • 1/4 cup honey or maple syrup
  • 1/2 cup cream cheese, softened
  • 1/2 cup fresh blueberries
  • 1/4 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup shredded coconut (optional)
  • 1/4 cup chopped nuts (optional)

Instructions

  1. In a large mixing bowl, combine the rolled oats, almond butter, honey or maple syrup, softened cream cheese, and vanilla extract. Stir until everything is evenly mixed.
  2. Gently fold in the fresh blueberries and any optional shredded coconut or chopped nuts.
  3. Cover the bowl with plastic wrap and refrigerate for about 30 minutes.
  4. After chilling, scoop out about a tablespoon of the mixture and roll it into balls.
  5. Place the energy bites on a baking sheet lined with parchment paper and optionally roll them in additional coconut or nuts.
  6. Refrigerate for another 30 minutes to set before serving.

Notes

These bites can be stored in an airtight container in the fridge for up to a week. They can also be frozen for up to three months.
