Ingredients

- 1 cup rolled oats
- 1/2 cup almond butter (or any nut butter of choice)
- 1/4 cup honey or maple syrup
- 1/2 cup cream cheese, softened
- 1/2 cup fresh blueberries
- 1/4 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/4 cup shredded coconut (optional)
- 1/4 cup chopped nuts (optional)
Instructions
- In a large mixing bowl, combine the rolled oats, almond butter, honey or maple syrup, softened cream cheese, and vanilla extract. Stir until everything is evenly mixed.
- Gently fold in the fresh blueberries and any optional shredded coconut or chopped nuts.
- Cover the bowl with plastic wrap and refrigerate for about 30 minutes.
- After chilling, scoop out about a tablespoon of the mixture and roll it into balls.
- Place the energy bites on a baking sheet lined with parchment paper and optionally roll them in additional coconut or nuts.
- Refrigerate for another 30 minutes to set before serving.
Notes
These bites can be stored in an airtight container in the fridge for up to a week. They can also be frozen for up to three months.
