- 1 lb ground beef
- 1 onion, diced
- Taco shells
- 1 cup shredded cheese (cheddar or your choice)
- 1 cup milk
- 2 tablespoons butter
- 2 tablespoons flour
- Salt and pepper to taste
- Optional toppings (sour cream, salsa, etc.)
Instructions
- In a large pan, heat a tablespoon of oil over medium heat. Add the diced onion and sauté it for about 3-4 minutes until it softens.
- Add the ground beef and cook until browned, about 6-8 minutes. Drain any excess fat and set aside.
- In a saucepan, melt butter over medium heat. Stir in flour to make a roux for 1-2 minutes.
- Slowly add milk, whisking continuously until the mixture thickens, about 4-5 minutes. Stir in shredded cheese until melted and smooth. Season with salt and pepper.
- Preheat your oven to 350°F (175°C). Fill taco shells with beef, drizzle with cheese sauce.
- Place filled taco shells in a dish and bake for 10 minutes until warmed and cheese is bubbly. Serve with optional toppings.
Notes
Great for adapting with different toppings. Can make gluten-free with corn taco shells and gluten-free flour.
