Description

A delightful dish that combines fresh seafood, crisp vegetables, and zesty dressing for a light and healthy choice.


Ingredients

  • 1.5 pounds octopus, boiled until tender
  • 8 large shrimp, peeled and deveined
  • 4 squid tubes, sliced into rings
  • 1 rib celery, chopped
  • 2 red onions, chopped
  • 2 bay leaves
  • 3 cloves garlic, minced
  • 2 lemons, for poaching and dressing
  • 3 tangerines, for dressing
  • 1/4 cup olive oil
  • 2 teaspoons honey Dijon mustard
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Prepare a large pot of water and bring it to a rolling boil. Add the bay leaves, octopus, and halved lemons. Cook the octopus until tender (30 to 40 minutes), then remove and let cool.
  2. In the same pot, cook the shrimp and squid rings for 3 to 5 minutes until pink and opaque. Drain and cool.
  3. Slice the cooled octopus into bite-sized pieces.
  4. In a large mixing bowl, combine octopus, shrimp, squid, celery, red onions, garlic, and parsley.
  5. Prepare the dressing by whisking together the olive oil, honey Dijon mustard, and lemon and tangerine juice.
  6. Pour the dressing over the seafood and vegetable mix and toss gently.
  7. Cover and refrigerate for at least 30 minutes before serving.

Notes

Storing any leftovers properly in an airtight container in the fridge is key to maintaining freshness. Best enjoyed fresh.
