- 1.5 pounds octopus, boiled until tender
- 8 large shrimp, peeled and deveined
- 4 squid tubes, sliced into rings
- 1 rib celery, chopped
- 2 red onions, chopped
- 2 bay leaves
- 3 cloves garlic, minced
- 2 lemons, for poaching and dressing
- 3 tangerines, for dressing
- 1/4 cup olive oil
- 2 teaspoons honey Dijon mustard
- 1/4 cup fresh parsley, chopped
Instructions
- Prepare a large pot of water and bring it to a rolling boil. Add the bay leaves, octopus, and halved lemons. Cook the octopus until tender (30 to 40 minutes), then remove and let cool.
- In the same pot, cook the shrimp and squid rings for 3 to 5 minutes until pink and opaque. Drain and cool.
- Slice the cooled octopus into bite-sized pieces.
- In a large mixing bowl, combine octopus, shrimp, squid, celery, red onions, garlic, and parsley.
- Prepare the dressing by whisking together the olive oil, honey Dijon mustard, and lemon and tangerine juice.
- Pour the dressing over the seafood and vegetable mix and toss gently.
- Cover and refrigerate for at least 30 minutes before serving.
