- 2 pounds Yukon gold potatoes, sliced 1/8-inch thick
- 1.5 pounds lean ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup cheddar cheese, shredded
- 1 cup milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 cup cream of mushroom soup
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, cook the ground beef with onions and garlic until browned; drain excess fat.
- In a large mixing bowl, combine sliced potatoes, cooked beef, milk, salt, pepper, and paprika.
- In a greased casserole dish, layer half the potato mixture, then spread half the cream of mushroom soup on top.
- Add the remaining potato mixture and top with the remaining soup.
- Cover with aluminum foil and bake for 45 minutes.
- Remove foil, sprinkle cheese on top, and bake for an additional 15 minutes until cheese is melted and golden.
- Let cool for a few minutes before serving.
Notes
Freshly grated cheese melts better than pre-shredded cheese. Let the casserole cool before slicing for easier serving.
