A simple yet delicious Fried Bologna Sandwich that brings back childhood memories with its comforting flavors and easy preparation.
Ingredients

- 16 slices bologna
- 1/4 cup mayonnaise
- 3 tablespoons Creole mustard
- 4 tablespoons butter, softened
- 4 slices American cheese
- 8 slices Texas toast
- 2 cups shredded iceberg lettuce
- 4 thick tomato slices
- 16 bread and butter pickle chips
- 2 cups thin dill pickle potato chips
Instructions
- Heat a skillet over medium heat and add 2 tablespoons of butter until melted.
- Add the bologna slices into the skillet and fry until golden brown, about 2-3 minutes on each side.
- In another skillet, toast the Texas toast slices until golden brown.
- Spread mayonnaise on one slice of toast and Creole mustard on the other.
- Layer fried bologna, a slice of American cheese, shredded lettuce, tomato slices, and pickle chips on the prepared toast.
- Top with the other slice of toast and press down gently.
- Return the sandwich to the skillet with remaining butter and grill until cheese melts and bread is crispy, about 3-4 minutes per side.
- Remove from skillet, cool slightly, cut in half, and serve with dill pickle potato chips.
Notes
Make sure to keep the heat moderate to avoid burning the bologna. Feel free to experiment with different cheeses and sauces for variations.
