1 ½ cups graham cracker crumbs
⅓ cup granulated sugar
½ cup unsalted butter, melted
24 oz cream cheese, softened
1 cup granulated sugar
3 large eggs
1 tsp vanilla extract
1 cup sour cream
1 cup fresh strawberries, pureed
1 cup heavy whipping cream
2 tbsp powdered sugar
1 cup fresh strawberries, sliced
Instructions
In a medium mixing bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until well combined. Press this mixture firmly into the bottom of a 9-inch springform pan to create a solid base.
In a large bowl, beat the softened cream cheese and granulated sugar until smooth and creamy. Add the eggs one at a time, mixing well after each addition. Incorporate the vanilla extract, sour cream, and pureed strawberries, blending until everything is smooth and combined.
Preheat your oven to 325°F (160°C). Pour the cheesecake filling onto the crust in your prepared pan. Bake for 60 minutes or until the center is set but still slightly jiggles. Remember, it will continue to set as it cools.
