2 cans (15 oz each) chickpeas, drained and rinsed
1 tablespoon coconut oil (or any oil of your choice)
1 onion, finely chopped
3 garlic cloves, minced
1-inch piece of ginger, grated
1 can (14 oz) coconut milk
2 tablespoons curry powder
1 teaspoon ground cumin
1 teaspoon turmeric
1 teaspoon salt (adjust to taste)
1 cup spinach (fresh or frozen)
Juice of 1 lime
Chopped cilantro for garnish
In a large skillet, heat coconut oil over medium heat. Add the chopped onion and sauté for about 5 minutes or until translucent.
Stir in the minced garlic and grated ginger. Sauté for an additional 2 minutes until aromatic.
Add curry powder, ground cumin, and turmeric. Stir well to coat the aromatics, letting the flavors bloom for 1-2 minutes.
Toss in the chickpeas and mix to combine, allowing them to absorb some of the spices.
Add the coconut milk, stirring thoroughly. Allow it to come to a simmer, stirring consistently.
Let the curry simmer for about 10 minutes. Add the spinach during the last 5 minutes of cooking.
Off the heat, stir in the fresh lime juice and serve hot, garnished with chopped cilantro.
