  • 1 tablespoon coconut oil (or any oil of your choice)
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 1 can (14 oz) coconut milk
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon turmeric
  • 1 teaspoon salt (adjust to taste)
  • 1 cup spinach (fresh or frozen)
  • Juice of 1 lime
  • Chopped cilantro for garnish

  • Instructions

  • In a large skillet, heat coconut oil over medium heat. Add the chopped onion and sauté for about 5 minutes or until translucent.
  • Stir in the minced garlic and grated ginger. Sauté for an additional 2 minutes until aromatic.
  • Add curry powder, ground cumin, and turmeric. Stir well to coat the aromatics, letting the flavors bloom for 1-2 minutes.
  • Toss in the chickpeas and mix to combine, allowing them to absorb some of the spices.
  • Add the coconut milk, stirring thoroughly. Allow it to come to a simmer, stirring consistently.
  • Let the curry simmer for about 10 minutes. Add the spinach during the last 5 minutes of cooking.
  • Off the heat, stir in the fresh lime juice and serve hot, garnished with chopped cilantro.
