Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line your muffin tin with paper liners.
  3. In a large mixing bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  4. In another bowl, mash the ripe bananas and mix in the melted butter, brown sugar, egg, and vanilla extract until well combined.
  5. Pour the wet ingredients into the dry ingredients and gently stir until just combined.
  6. Fill each muffin cup about two-thirds full with batter.
  7. Bake for 18-20 minutes, testing with a toothpick for doneness.
  8. Let them cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
