Instructions
- Preheat your oven to 350°F (175°C).
- Line your muffin tin with paper liners.
- In a large mixing bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, mash the ripe bananas and mix in the melted butter, brown sugar, egg, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and gently stir until just combined.
- Fill each muffin cup about two-thirds full with batter.
- Bake for 18-20 minutes, testing with a toothpick for doneness.
- Let them cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
