  • Thoroughly wash the potatoes. You can peel them if you prefer, but leaving the skins on adds texture and nutrients. Cut the potatoes into uniform, bite-sized pieces.
  • Place the diced potatoes in a large pot and cover them with cold water. Add a pinch of salt to the water to enhance the flavor. Bring the water to a boil, then reduce the heat and simmer until the potatoes are fork-tender, about 15-20 minutes. Don’t overcook them, or they’ll become mushy!
  • Once the potatoes are cooked, drain them immediately and transfer them to a bowl to cool slightly. Letting them cool slightly prevents the dressing from melting and ensures the potatoes absorb the flavors better.
  • While the potatoes are cooling, prepare the dressing. In a separate bowl, whisk together the mayonnaise, mustard, vinegar, and seasonings until smooth. Taste and adjust the seasonings to your liking. This is where you can get creative and add your personal touch!
  • Gently fold the dressing into the slightly cooled potatoes, along with the diced celery (or red onion) and fresh herbs. Be careful not to mash the potatoes. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld. Chilling also helps the deviled potatoes achieve the perfect creamy consistency.
