Ingredients

- 1 1/2 cups all-purpose flour
- 1/2 cup finely chopped pecans
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, cold, cut into small pieces
- 1 large egg yolk
- 1 teaspoon vanilla extract
- Pinch of salt
- 1 cup heavy cream
- 1 cup whole milk
- 2 large eggs
- 2 large egg yolks
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine flour, pecans, sugar, and salt.
- Add cold butter and mix until crumbly.
- Stir in egg yolk and vanilla extract.
- Press the crust mixture into a pie pan.
- Blind bake the crust for about 15 minutes, until lightly golden.
- In a separate bowl, whisk together heavy cream, milk, eggs, and egg yolks.
- Once the crust is cool, pour the filling into it.
- Bake for 30-35 minutes; the filling should be set with a slight jiggle.
- Let the pie cool completely before serving.
Notes
Serve plain or with whipped cream. Can be stored in the fridge for up to 4 days.
