Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup finely chopped pecans
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, cold, cut into small pieces
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 1 cup heavy cream
  • 1 cup whole milk
  • 2 large eggs
  • 2 large egg yolks

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, pecans, sugar, and salt.
  3. Add cold butter and mix until crumbly.
  4. Stir in egg yolk and vanilla extract.
  5. Press the crust mixture into a pie pan.
  6. Blind bake the crust for about 15 minutes, until lightly golden.
  7. In a separate bowl, whisk together heavy cream, milk, eggs, and egg yolks.
  8. Once the crust is cool, pour the filling into it.
  9. Bake for 30-35 minutes; the filling should be set with a slight jiggle.
  10. Let the pie cool completely before serving.

Notes

Serve plain or with whipped cream. Can be stored in the fridge for up to 4 days.
