- 1 1/2 cups dates, pitted and chopped
- 1 cup hot brewed coffee
- 1 3/4 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
Instructions
- Preheat your oven to 350°F (175°C). Grease a loaf pan with butter or cooking spray.
- Chop dates and mix with hot brewed coffee in a bowl. Let sit for 10 minutes.
- In a large bowl, cream softened butter and granulated sugar until light and fluffy.
- Add the date and coffee mixture to the butter and sugar. Mix until well blended.
- In another bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- Slowly add the dry mixture to the wet mixture, stir gently until combined.
- Fold in chopped walnuts.
- Pour batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes, checking with a toothpick for doneness.
- Let cool in the pan for 10 minutes before transferring to a wire rack.
Notes
For a healthier version, use whole wheat flour. For a vegan option, substitute butter with coconut oil.
