Description

A delicious and moist loaf combining the rich flavor of dates and the comforting warmth of coffee, perfect for breakfast or as a dessert.


Ingredients

  • 1 1/2 cups dates, pitted and chopped
  • 1 cup hot brewed coffee
  • 1 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan with butter or cooking spray.
  2. Chop dates and mix with hot brewed coffee in a bowl. Let sit for 10 minutes.
  3. In a large bowl, cream softened butter and granulated sugar until light and fluffy.
  4. Add the date and coffee mixture to the butter and sugar. Mix until well blended.
  5. In another bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  6. Slowly add the dry mixture to the wet mixture, stir gently until combined.
  7. Fold in chopped walnuts.
  8. Pour batter into the prepared loaf pan and smooth the top.
  9. Bake for 50-60 minutes, checking with a toothpick for doneness.
  10. Let cool in the pan for 10 minutes before transferring to a wire rack.

Notes

For a healthier version, use whole wheat flour. For a vegan option, substitute butter with coconut oil.
