Ingredients

  • 1 lb shrimp, peeled and deveined
  • 9 oz cheese tortellini, fresh or refrigerated
  • 1 tbsp olive oil
  • 2 tsp Cajun or blackened seasoning
  • 2 cups fresh spinach, chopped
  • 1 tbsp butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add shrimp and Cajun seasoning; cook until shrimp are pink, about 2-3 minutes. Remove and set aside.
  3. Melt butter in the same skillet and sauté minced garlic until fragrant, about 1 minute.
  4. Add chopped spinach and cook for 2 minutes until wilted.
  5. Pour in heavy cream and bring to a gentle simmer.
  6. Add cooked tortellini and shrimp; mix well to coat in the sauce.
  7. Cook for an additional 2-3 minutes until heated through.
  8. Serve hot and enjoy!

Notes

For a lighter version, consider using half-and-half or a plant-based cream. Adds a pop of color and nutrients with the spinach.
