- 1 lb shrimp, peeled and deveined
- 9 oz cheese tortellini, fresh or refrigerated
- 1 tbsp olive oil
- 2 tsp Cajun or blackened seasoning
- 2 cups fresh spinach, chopped
- 1 tbsp butter
- 3 cloves garlic, minced
- 1 cup heavy cream
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add shrimp and Cajun seasoning; cook until shrimp are pink, about 2-3 minutes. Remove and set aside.
- Melt butter in the same skillet and sauté minced garlic until fragrant, about 1 minute.
- Add chopped spinach and cook for 2 minutes until wilted.
- Pour in heavy cream and bring to a gentle simmer.
- Add cooked tortellini and shrimp; mix well to coat in the sauce.
- Cook for an additional 2-3 minutes until heated through.
- Serve hot and enjoy!
Notes
For a lighter version, consider using half-and-half or a plant-based cream. Adds a pop of color and nutrients with the spinach.
