- 1 lb ground beef
- 1 tablespoon olive oil
- 1 onion, chopped
- 1 medium cabbage, chopped
- 2 carrots, diced
- 2 cloves garlic, minced
- 6 cups beef broth
- 1 can (14.5 oz) diced tomatoes
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and cook until soft and translucent, about 5 minutes.
- Add the ground beef and cook until browned, breaking it apart as it cooks, about 5-7 minutes.
- Stir in the minced garlic, diced carrots, and chopped cabbage; cook for 3-4 minutes until the cabbage begins to soften.
- Add the beef broth, canned tomatoes, Italian seasoning, and season with salt and pepper.
- Bring to a boil, then reduce the heat to low, cover, and let simmer for 30-40 minutes until the cabbage is tender.
- Ladle the hot soup into bowls. Serve with crusty bread if desired.
