Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 medium cabbage, chopped
  • 2 carrots, diced
  • 2 cloves garlic, minced
  • 6 cups beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and cook until soft and translucent, about 5 minutes.
  3. Add the ground beef and cook until browned, breaking it apart as it cooks, about 5-7 minutes.
  4. Stir in the minced garlic, diced carrots, and chopped cabbage; cook for 3-4 minutes until the cabbage begins to soften.
  5. Add the beef broth, canned tomatoes, Italian seasoning, and season with salt and pepper.
  6. Bring to a boil, then reduce the heat to low, cover, and let simmer for 30-40 minutes until the cabbage is tender.
  7. Ladle the hot soup into bowls. Serve with crusty bread if desired.
