4 large eggs
100g granulated sugar
80g all-purpose flour
40g cocoa powder
1 tsp baking powder
Pinch of salt
100ml heavy cream
200g dark chocolate, melted
Powdered sugar for dusting
Preheat your oven to 180°C (350°F). Line a 12×15-inch baking sheet with parchment paper.
In a large mixing bowl, beat the eggs and granulated sugar together until thick and pale—about 5 minutes.
Sift together the flour, cocoa powder, baking powder, and salt in a separate bowl.
Gently fold the dry ingredients into the egg mixture.
Pour the batter into the prepared baking sheet and smooth the top. Bake for about 10 minutes, or until springy to the touch.
Dust the top with powdered sugar, invert onto a kitchen towel, and roll it up. Allow it to cool completely.
Whip the heavy cream until stiff peaks form, then fold in the melted dark chocolate.
Unroll the cooled cake, spread the chocolate whipped cream filling evenly, and roll it back up, ensuring a tight seal.
Wrap the finished roll in plastic wrap and refrigerate for at least 30 minutes. Dust with powdered sugar before serving.
