Description

A comforting and hearty Chicken Stew that brings warmth to your home, filled with tender chicken and fresh vegetables.


Ingredients

  • 1 yellow onion, chopped
  • 3 ribs celery, chopped
  • 4 cloves garlic, minced
  • 1/2 lb. carrots, sliced
  • 1.75 lbs. boneless, skinless chicken thighs, cut into chunks
  • 4 Tbsp all-purpose flour, divided
  • 2 Tbsp butter
  • 1 Tbsp olive oil
  • 1.5 lbs. baby potatoes, halved
  • 1 tsp dried parsley
  • 1/2 tsp dried thyme
  • 1/2 tsp dried rosemary
  • 68 cups chicken broth or water, as needed

Instructions

  1. Heat a large pot on medium heat and add butter and olive oil. Wait until melted.
  2. Sauté chopped onion and celery for 5–7 minutes until soft. Add garlic and sauté for another minute.
  3. Sprinkle in 4 tablespoons of flour and stir to coat the vegetables, cooking for about a minute.
  4. Add chicken chunks, sliced carrots, and baby potatoes, stirring to combine.
  5. Pour enough water or chicken broth to cover all ingredients, which is about 6–8 cups.
  6. Season with dried parsley, thyme, and rosemary. Bring to a gentle simmer over medium-high heat.
  7. Once bubbling, reduce heat to low, cover, and let cook for 30–40 minutes until chicken is tender.
  8. Taste and adjust seasoning with salt and pepper. Serve hot in bowls.
