A delightful low carb oven dish featuring chicken, spinach, mushrooms, and mozzarella cheese that’s easy to prepare and perfect for family dinners.
Ingredients

- 1 small bag fresh baby spinach
- 1 dash pepper
- 1 dash Herb and Garlic Seasoning
- 8 oz shredded mozzarella cheese
- 6 thin sliced chicken breasts
- 8 oz sliced mushrooms
- 2 tablespoons olive oil
- 1 clove garlic
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat the olive oil over medium heat.
- Add minced garlic and sliced mushrooms, and sauté for about 5-7 minutes until tender.
- Layer the thin sliced chicken breasts in a baking dish.
- Season the chicken with pepper and Herb and Garlic Seasoning.
- Add the sautéed mixture of mushrooms and spinach on top of the chicken.
- Sprinkle shredded mozzarella cheese over the top.
- Cover the dish with foil and bake for 25-30 minutes.
- Remove the foil and bake for another 10-15 minutes until the cheese is bubbly and golden.
- Let it cool for a few minutes before serving.
Notes
Substitute spinach with kale or Swiss chard if desired. For dairy-free, use dairy-free cheese.
