Description

A delightful low carb oven dish featuring chicken, spinach, mushrooms, and mozzarella cheese that’s easy to prepare and perfect for family dinners.


Ingredients

Scale
  • 1 small bag fresh baby spinach
  • 1 dash pepper
  • 1 dash Herb and Garlic Seasoning
  • 8 oz shredded mozzarella cheese
  • 6 thin sliced chicken breasts
  • 8 oz sliced mushrooms
  • 2 tablespoons olive oil
  • 1 clove garlic

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat the olive oil over medium heat.
  3. Add minced garlic and sliced mushrooms, and sauté for about 5-7 minutes until tender.
  4. Layer the thin sliced chicken breasts in a baking dish.
  5. Season the chicken with pepper and Herb and Garlic Seasoning.
  6. Add the sautéed mixture of mushrooms and spinach on top of the chicken.
  7. Sprinkle shredded mozzarella cheese over the top.
  8. Cover the dish with foil and bake for 25-30 minutes.
  9. Remove the foil and bake for another 10-15 minutes until the cheese is bubbly and golden.
  10. Let it cool for a few minutes before serving.

Notes

Substitute spinach with kale or Swiss chard if desired. For dairy-free, use dairy-free cheese.
