- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 2 tablespoons olive oil, divided
- 1 tablespoon unsalted butter
- 8 oz cremini or button mushrooms, sliced
- 1 cup Asiago cheese, grated
- 2 tablespoons Dijon mustard
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- Fresh parsley, for garnish
Instructions
- Season the chicken breasts generously with salt and pepper on both sides.
- In a large skillet, heat 1 tablespoon of olive oil and unsalted butter over medium-high heat. Add the seasoned chicken breasts and cook for about 5-6 minutes on each side until golden brown. Remove from skillet and cover with foil to keep warm.
- Add remaining tablespoon of olive oil to the same skillet and sauté sliced mushrooms for 5-7 minutes, until tender and browned.
- Pour in the chicken broth, Dijon mustard, and heavy cream. Stir well and bring to a gentle simmer.
- Return the chicken to the skillet and sprinkle with grated Asiago cheese. Cover and cook for 5-7 minutes until the chicken is cooked through and the sauce has thickened.
- Garnish with freshly chopped parsley and serve hot.
Notes
For variations, consider using different cheeses or adding greens like spinach. Pair with a salad or garlic bread.
