Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 2 tablespoons olive oil, divided
  • 1 tablespoon unsalted butter
  • 8 oz cremini or button mushrooms, sliced
  • 1 cup Asiago cheese, grated
  • 2 tablespoons Dijon mustard
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • Fresh parsley, for garnish

Instructions

  1. Season the chicken breasts generously with salt and pepper on both sides.
  2. In a large skillet, heat 1 tablespoon of olive oil and unsalted butter over medium-high heat. Add the seasoned chicken breasts and cook for about 5-6 minutes on each side until golden brown. Remove from skillet and cover with foil to keep warm.
  3. Add remaining tablespoon of olive oil to the same skillet and sauté sliced mushrooms for 5-7 minutes, until tender and browned.
  4. Pour in the chicken broth, Dijon mustard, and heavy cream. Stir well and bring to a gentle simmer.
  5. Return the chicken to the skillet and sprinkle with grated Asiago cheese. Cover and cook for 5-7 minutes until the chicken is cooked through and the sauce has thickened.
  6. Garnish with freshly chopped parsley and serve hot.

Notes
