Description

Delicious and easy-to-make Chicken Bell Pepper Burritos, filled with tender chicken, colorful bell peppers, and creamy ranch dressing.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup bell peppers, chopped
  • 1/2 cup ranch dressing
  • 1 cup shredded cheddar cheese
  • 1 can black beans, drained
  • 1/2 cup corn kernels
  • Salt, to taste
  • Black pepper, to taste
  • 4 large flour tortillas

Instructions

  1. In a large bowl, combine shredded chicken, chopped bell peppers, ranch dressing, cheddar cheese, black beans, and corn. Season with salt and black pepper, and mix gently.
  2. Warm tortillas in a skillet over medium heat for 15-20 seconds on each side until soft and pliable.
  3. Place a spoonful of filling in the center of each tortilla. Fold in the sides and roll from the bottom up tightly.
  4. For a crispy finish, cook the rolled burritos seam-side down in the skillet for 2-3 minutes on each side until golden brown.
  5. Serve warm and enjoy!

Notes

Let the burritos cool slightly before cutting. Use toothpicks to hold them together if needed.
