Description

Ingredients

  • 2 lbs chicken (breasts or thighs, boneless and skinless)
  • 6 cups chicken broth
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 medium onion, chopped
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3/4 cup milk
  • 1/4 cup butter, melted

Instructions

  1. In a large pot, add the chicken, chicken broth, diced carrots, diced celery, and chopped onion. Bring to a boil over medium-high heat, then reduce heat and simmer for about 20 minutes.
  2. Remove chicken from the pot and shred it once cooled. Return shredded chicken to the pot.
  3. In a mixing bowl, combine flour, baking powder, salt, and black pepper. Add milk and melted butter, stirring until just combined.
  4. Drop spoonfuls of dumpling batter into the simmering broth. Cover and cook for 15-20 minutes until dumplings are fluffy and cooked through.
  5. Ladle chicken and dumplings into bowls and serve hot.

Notes

For added flavor, stir in fresh herbs like thyme or parsley. Adjust the broth’s salt and pepper before serving.
