- 2 pounds russet potatoes, thinly sliced
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 2 cups milk
- 2 cups shredded cheddar cheese
- Salt and pepper to taste
- Optional: paprika for garnishing
Instructions
- Preheat your oven to 350°F (175°C).
- In a medium saucepan, melt the butter over medium heat.
- Add the flour to the melted butter and whisk together, cooking for about 1 minute.
- Gradually pour in the milk while whisking continuously until the sauce thickens, about 3-5 minutes.
- Remove from heat and stir in the shredded cheese until melted and creamy.
- Grease a baking dish and layer half of the sliced potatoes, seasoning with salt and pepper.
- Pour half of the cheese sauce over the potatoes, covering evenly.
- Repeat with the remaining potatoes, seasoning and pouring the rest of the cheese sauce on top.
- Cover the dish with aluminum foil and bake for 45 minutes.
- Remove the foil and bake for an additional 15-20 minutes until the top is golden brown and bubbly.
- Let cool for a few minutes before serving.
Notes
Store leftovers in an airtight container for up to 3 days in the fridge or freeze for up to 2 months. Reheat in the oven for best results.
