- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 bell pepper (red, green, or yellow)
- 1 onion
- 1 teaspoon fajita seasoning
- 1 cup queso cheese (or cheese of choice)
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- In a large skillet, pour in the olive oil and heat it over medium-high heat.
- While the oil warms, sprinkle salt, pepper, and fajita seasoning on both sides of the chicken breasts.
- Carefully place the seasoned chicken in the hot skillet and cook for about 6-7 minutes per side until golden brown and reaching an internal temperature of 165°F.
- Remove the chicken from the skillet and let it rest for a few minutes.
- In the same skillet, add sliced bell pepper and onion, stirring occasionally, and cook for about 5 minutes until tender.
- While the vegetables are cooking, slice the rested chicken into strips.
- Add the sliced chicken back to the skillet along with the queso cheese and stir until melted.
- Serve warm, garnished with fresh cilantro if desired.
Notes
Use fresh ingredients for the best flavor and don’t overcrowd the pan for even cooking.
