Description

Ingredients

  • 5 flour tortillas (burrito size)
  • 2 1/2 cups shredded chicken (rotisserie)
  • 1/2 packet taco seasoning
  • 2 cups queso cheese (or more, to taste)
  • 1 cup diced tomatoes
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Chopped cilantro (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the shredded chicken, taco seasoning, and diced tomatoes, stirring gently.
  3. Lay a tortilla flat and spoon some of the chicken mixture into the center, then roll it up tightly and place seam side down in a greased baking dish.
  4. Repeat with remaining tortillas and filling.
  5. Pour the queso cheese evenly over the rolled enchiladas and sprinkle shredded cheese on top.
  6. Bake for about 20 minutes, or until the cheese is bubbly and golden.
  7. Let cool slightly, garnish with chopped cilantro and serve.
