- 5 flour tortillas (burrito size)
- 2 1/2 cups shredded chicken (rotisserie)
- 1/2 packet taco seasoning
- 2 cups queso cheese (or more, to taste)
- 1 cup diced tomatoes
- 1 cup shredded cheese (cheddar or Mexican blend)
- Chopped cilantro (for garnish)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the shredded chicken, taco seasoning, and diced tomatoes, stirring gently.
- Lay a tortilla flat and spoon some of the chicken mixture into the center, then roll it up tightly and place seam side down in a greased baking dish.
- Repeat with remaining tortillas and filling.
- Pour the queso cheese evenly over the rolled enchiladas and sprinkle shredded cheese on top.
- Bake for about 20 minutes, or until the cheese is bubbly and golden.
- Let cool slightly, garnish with chopped cilantro and serve.
