Description
A vibrant and flavorful dish combining grilled chicken, cherry tomatoes, and fresh herbs on a bed of penne pasta.
Ingredients

- 2 boneless, skinless chicken breasts, grilled and sliced
- 1 pound penne pasta
- 2 cups cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 3 cloves garlic, minced
- 1/4 cup fresh basil, chopped
- 1/4 cup balsamic vinegar
- 1/3 cup olive oil
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Boil a large pot of salted water and cook the penne pasta until al dente, about 10-12 minutes.
- In a large bowl, combine cherry tomatoes, red onion, garlic, basil, balsamic vinegar, and olive oil. Add salt and pepper, and mix gently. Let sit for 10-15 minutes.
- Drain the pasta, reserving 1/2 cup of pasta water. In a large pan over medium heat, combine the pasta and bruschetta mixture.
- If the mixture looks dry, add a splash of reserved pasta water.
- Fold in the grilled chicken and half of the Parmesan cheese, warming over low heat for 3-5 minutes.
- Serve pasta in bowls topped with remaining Parmesan cheese and fresh basil.
Notes
For a vegetarian option, you can replace chicken with Portobello mushrooms or chickpeas.
