Description

A vibrant and flavorful dish combining grilled chicken, cherry tomatoes, and fresh herbs on a bed of penne pasta.


Ingredients

  • 2 boneless, skinless chicken breasts, grilled and sliced
  • 1 pound penne pasta
  • 2 cups cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 3 cloves garlic, minced
  • 1/4 cup fresh basil, chopped
  • 1/4 cup balsamic vinegar
  • 1/3 cup olive oil
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Boil a large pot of salted water and cook the penne pasta until al dente, about 10-12 minutes.
  2. In a large bowl, combine cherry tomatoes, red onion, garlic, basil, balsamic vinegar, and olive oil. Add salt and pepper, and mix gently. Let sit for 10-15 minutes.
  3. Drain the pasta, reserving 1/2 cup of pasta water. In a large pan over medium heat, combine the pasta and bruschetta mixture.
  4. If the mixture looks dry, add a splash of reserved pasta water.
  5. Fold in the grilled chicken and half of the Parmesan cheese, warming over low heat for 3-5 minutes.
  6. Serve pasta in bowls topped with remaining Parmesan cheese and fresh basil.

Notes

For a vegetarian option, you can replace chicken with Portobello mushrooms or chickpeas.
