Description
A delightful and visually appealing parfait featuring layers of creamy vanilla ice cream swirled with sweet blueberry sauce.
Ingredients
Scale
- 1 1/2 cups fresh or frozen blueberries
- 1 tbsp lemon juice
- 1/4 cup sugar
- 1 tsp cornstarch + 2 tsp water (optional)
- 4 cups vanilla ice cream (softened slightly for swirling)
- 2 cups blueberry ice cream or blueberry sorbet
- Fresh blueberries (for topping)
- Blackberries (for topping)
- Whipped cream (optional)
- Crushed graham crackers or shortbread cookies (optional)
Instructions
- Make the Blueberry Sauce: In a saucepan, combine blueberries, sugar, and lemon juice over medium heat. Stir until blueberries burst, about 7-10 minutes. For a thicker sauce, mix cornstarch and water, then add to the saucepan and simmer for 1 more minute. Let cool completely.
- Assemble the Parfaits: In a tall glass or dessert bowl, start with a scoop of vanilla ice cream. Add a spoonful of blueberry sauce, then a scoop of blueberry ice cream or sorbet. Repeat layers, swirling gently for a marbled effect.
- Top & Serve: Add fresh blueberries or blackberries on top, a swirl of whipped cream, and sprinkle with crushed graham crackers or cookies. Serve immediately.
Notes
For a special touch, drizzle honey or white chocolate sauce. You can make no-churn vanilla and blueberry ice cream for a homemade alternative.
