- 6 cups Yukon gold potatoes, thinly sliced (1/8-inch rounds)
- 1.5 lbs lean ground beef
- 2 cups Colby Jack cheese, shredded
- 1 cup cream
- 1 onion, chopped
- Salt and pepper to taste
- Butter or oil for greasing
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, cook the ground beef and onion over medium heat until browned. Season with salt and pepper.
- Grease a baking dish with butter or oil.
- Layer half of the sliced potatoes at the bottom of the dish, followed by half of the beef mixture and half of the cheese.
- Repeat layers with the remaining potatoes, beef, and cheese.
- Pour cream over the top layer.
- Cover with aluminum foil and bake for 45 minutes.
- Remove foil and bake for an additional 15-20 minutes until the potatoes are tender and the cheese is bubbly and golden.
- Let cool slightly before serving.
