Description

A delightful combination of juicy chicken and flavorful fried rice, enhanced by a creamy and spicy sauce.


Ingredients

  • 1 lb boneless chicken breast, cut into bite-sized pieces
  • 3 cups day-old cooked rice
  • 2 tablespoons vegetable oil
  • 1/4 cup mayonnaise
  • 3 tablespoons sweet chili sauce
  • 1 tablespoon sriracha
  • 1 tablespoon soy sauce
  • 2 green onions, sliced for garnish
  • Salt and pepper, to taste

Instructions

  1. In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat until shimmering.
  2. Add the chicken pieces, season with salt and pepper, and cook for 6-8 minutes until golden brown and cooked through. Remove and set aside.
  3. Add the day-old cooked rice to the same skillet, breaking up clumps gently, and stir-fry for 2-3 minutes.
  4. In a small bowl, combine mayonnaise, sweet chili sauce, sriracha, and soy sauce to make the special sauce.
  5. Toss the cooked chicken back into the skillet, add the sauce, and mix well to coat everything. Heat for an additional 1-2 minutes.
  6. Serve hot, garnished with sliced green onions.

Notes

Use cold, day-old rice for best results. Can be adapted to vegetarian by replacing chicken with tofu or vegetables.
