Description

A rich and creamy cheesecake infused with Baileys Irish Cream, perfect for celebrations and family gatherings.


Ingredients

  • 1 1/2 cups chocolate cookie crumbs
  • 1/4 cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup sour cream, room temperature
  • 4 large eggs, room temperature
  • 3/4 cup Baileys Irish Cream
  • 1 tbsp vanilla extract
  • 2 tbsp all-purpose flour
  • 1/2 cup semi-sweet chocolate chips, melted and slightly cooled
  • 1 cup heavy whipping cream
  • 2 tbsp powdered sugar
  • 2 tbsp Baileys Irish Cream (for topping)
  • Chocolate shavings or cocoa powder for garnish

Instructions

  1. Preheat your oven to 325°F (165°C) and grease a 9-inch springform pan.
  2. In a bowl, mix chocolate cookie crumbs with melted butter and press into the pan to form the crust.
  3. Bake crust for about 10 minutes and let cool completely.
  4. In a mixing bowl, beat cream cheese and sugar until smooth, then add sour cream, Baileys, and vanilla, mixing well.
  5. Add eggs one at a time, mixing gently after each addition, then fold in flour and cooled chocolate chips.
  6. Pour filling over the cooled crust and smooth the top.
  7. Wrap the pan in aluminum foil and place it in a baking dish filled with hot water, then bake for 60-70 minutes.
  8. Turn off the oven and let the cheesecake cool with the door ajar for about an hour, then refrigerate for at least 6 hours or overnight.
  9. For the topping, whip heavy cream with powdered sugar, then add Baileys and whip until stiff peaks form.
  10. Remove springform pan sides, spread whipped cream over the cheesecake, and garnish with chocolate shavings or cocoa powder. Slice and serve.

Notes

Best served chilled and can be stored in the fridge for 5-7 days. Can also be frozen for longer storage.
