Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup sugar
  • 4 (8 oz) packages cream cheese, softened
  • 1 cup sugar
  • 1/4 cup all-purpose flour
  • 4 large eggs
  • 1 cup apple cider
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together the graham cracker crumbs, melted butter, and 1/4 cup sugar until it feels like wet sand.
  3. Press the mixture into the bottom of a 9-inch springform pan.
  4. In another large mixing bowl, beat the softened cream cheese with a mixer until smooth and creamy.
  5. Gradually mix in 1 cup of sugar and 1/4 cup flour until fully combined.
  6. Add the eggs one at a time, mixing well after each addition.
  7. Stir in the apple cider, vanilla extract, cinnamon, and nutmeg.
  8. Pour the filling over the prepared crust in the springform pan.
  9. Bake in the preheated oven for about 55-60 minutes until the center is set but slightly wobbly.
  10. Let it cool on a wire rack, then refrigerate for at least 4 hours or overnight before serving.

Notes

Use room temperature cream cheese for a smoother batter and do not overmix after adding the eggs. Slice with a warm knife for clean edges.
