- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup sugar
- 4 (8 oz) packages cream cheese, softened
- 1 cup sugar
- 1/4 cup all-purpose flour
- 4 large eggs
- 1 cup apple cider
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix together the graham cracker crumbs, melted butter, and 1/4 cup sugar until it feels like wet sand.
- Press the mixture into the bottom of a 9-inch springform pan.
- In another large mixing bowl, beat the softened cream cheese with a mixer until smooth and creamy.
- Gradually mix in 1 cup of sugar and 1/4 cup flour until fully combined.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the apple cider, vanilla extract, cinnamon, and nutmeg.
- Pour the filling over the prepared crust in the springform pan.
- Bake in the preheated oven for about 55-60 minutes until the center is set but slightly wobbly.
- Let it cool on a wire rack, then refrigerate for at least 4 hours or overnight before serving.
Notes
Use room temperature cream cheese for a smoother batter and do not overmix after adding the eggs. Slice with a warm knife for clean edges.
